Reese's Fudge Pies

here you go! step by step instructions to make mini reese's fudge pies. this recipe makes 4 small pies, and each pie can probably serve 2...unless you are really hungry..
The pie pan I used is from Sur La Table. You can use a regular pie pan instead but you may need to adjust the baking time. I would recommend making pie dough if you have the time, but the refrigerated kind will work.
Cut out the pie dough using the tool that comes with the pie pan. 
Pile in the peanut butter cups!
cover with brownie batter.. 
make the peanut butter topping by mixing the butter, brown sugar, vanilla, egg, peanut butter and chocolate. This keeps the brownie moist and gooey inside.
Bake...
add some chocolate ganache and more peanut butter cups...
whipped cream?


Reese's Fudge Pies
1 pkg refrigerated pie crust (or homemade pie dough)
1 brownie mix plus ingredients called for on box
1/4 c melted butter
1/4 c brown sugar
1 tsp. vanilla extract
1 egg
1/4 c peanut butter
1/4 c melted chocolate

1. preheat oven to 350
2. roll out pie dough and cut to fit the mini pie pans
3. prepare brownie mix according to directions on box and divide between the pie pans
4. combine the melted butter, brown sugar, vanilla, egg, peanut butter and melted chocolate. stir until smooth. spread over brownie batter
5. bake 30-40 minutes or until the edges are cooked though but the center is still soft inside.

Chocolate Ganache:
1/2 c. semi sweet chocolate chips
1/4 c. heavy whipping cream

1. heat the whipping cream in the microwave approx 1 minute or until it just starts to boil.
2. pour over chocolate chips and whisk until smooth. 
3. let set about 5 minutes to thicken
